1 1/2 cups of shredded mozzarella (hand
shred from a block of cheese, instead of
pre-shredded)
2 oz softened cream cheese
Put mozzarella and cream cheese
together and put in microwave for 1 min 30
seconds, stirring every 30 seconds with a
fork.
Add to hot mixed cheese:
3/4 cup almond flour
Salt
Italian spices
Mix all together with fork until dough
forms.
Take a dab of olive oil and moisten
your hands with it. Knead dough.
Spread on silpat (silicone mat). Form
to the edges of mat.
Bake at 400 degrees for about 10
minutes.
Remove from oven and add sauces,
mozzarella cheese and desired toppings.
Bake at 400 degrees for 8-10 minutes.
Transfer to cutting board and cut into
8 pieces.
